Solar cooking (harnessing the heat of the sun to cook food in a solar or sun oven) is a triple treat for me because it enables me to conserve energy, enjoy the outdoors more and cook delicious food all at once!  If you haven’t yet tried solar cooking (or have never even heard of it) read on for tips on why and how to get started.

Aside from the obvious benefits; saving energy and therefore money, solar cooking has many other added incentives.  It enables you to:

1) save time by letting food cook while you do something else

2) cook and pasteurize water wherever you are (on the beach, at the park, camping)

Thoughts about Health Care Reform

Posted by Jenica on Jul 29, 2009 in Health Care | 1 Comment

Health Care ReformAs a holistic health professional I am very interested in the future of health care and in the current debate regarding health care reform.  In striving to understand what is at stake, what is being proposed and how I feel about all of it I have hit several roadblocks in my understanding.  I heard questions raised about whether the government offering a public health care option would be socialist (but we have a public option in the education sector – our public schools and universities – and that hasn’t put private schools out of business).  I also heard concerns about whether a public option would create a poor standard of care (but our standard of care in the U.S. already ranks so low and isn’t competition-even if it’s federal- supposed to drive innovation).

Summer Yum!

Posted by Jenica on Jul 10, 2009 in Celebration, Cooking | 1 Comment

One of my favorite parts of summer is all the sweet berries that become available at the farmer’s markets and in the stores.  Since it is their season the berries are cheaper than at other times of year and taste much better.  So when my partner and I were invited to a very special celebration (his great aunt’s 92nd birthday – talk about Lasting Balance!) I decided to experiment with something I had never made before – chocolate covered strawberries and raspberries.Chocolate covered strawberries and raspberries

Water

Posted by Jenica on Jun 29, 2009 in Conservation | Comment on this post

I just spoke with a neighbor not long ago about the water situation here in Southern Oregon where I live.  Our county is cracking down on water use and monitoring irrigation closely.  It got me thinking even more about how valuable our water supply is and gave me the inspiration to write this post on conserving and enjoying our water reserves.

Site launch… and more reasons to celebrate!

Welcome to Lasting Balance and to my blog!

My intention for this blog is for it to be a source of information and inspiration, so check back often for a dose of good energy and food for thought.  We’ll cover topics including but not limited to yoga, meditation, flower essences, reiki, spirituality, seasonal cycles, holistic health for people and animals, supplements, healthy eating, recipes and cooking, nature, gardening, conservation and more. If you’d like to be reminded when I post a blog, just subscribe in the upper right hand corner.

I’d like to take this opportunity to wish everyone a Happy Summer Solstice.  The longest day of the year is an opportunity to give thanks to the Sun and all the warmth and sustenance it provides us with.
